That’s the thing. My phone has been in a case since the day I took it out of the box. I do take it out of the case quite often because I like holding the stainless steel. For maybe a min or two at the most and then I put it back in the case. So my concern is that it scratches this easily.

Not on mine, but mine has been in a protective case since it came out of its box. The iPhone 12 Pro Pro Max have finely polished sides. Metal, even stainless steel can scratch. Any scratch will become plainly seen. If you want to protect it from scratches, put your phone in a case.

Nothing scratches in air. Perhaps the motion of moving it in and out of the case is causing this, but I can tell you my 12 Pro max has zero scratches on it, but it hasn't been taken out of the Spigen Quartz Hybrid case I put it in right out of the box.
