MacBook Pro 2019 (16") is really really slow

Hello,

currently I'm running a MacBook Pro 2019, 16 Zoll and it started to getting really really slow. Sometimes it even crashes, when I'm shutting it down and some apps are really really slow.

In the past I could easily use vmware or docker and run vm's and meanwhile develop dotnet core/java/scala applications, unfortunatly at recent times it's more and more impossible to do these heavy development tasks.

is this something serious where I should call the apple hotline?

I attached an EtreCheck if somebody see's some problems, it would be really helpful.

(Oh and I reinstalled my MacBook Pro a few days ago, clean install by deleting a drive partitions and reinstalled via Online macOS Big Sur, oh the device was really slow before big sur)

Please determine if the same problems occur in "Safe Mode": Use safe mode to isolate issues with your Mac.

Security:
...
Automatic Updates: Disabled
Security Updates: Disabled

I have seen that before and have no idea how it happens. Were you aware of having deliberately defeated macOS's security features? Is there a reason you intended to do that?

Unsigned Files:
Launchd: ~/Library/LaunchAgents/de.envisia.elasticsearch.plist
Executable: ~/Applications/elasticsearch/bin/elasticsearch

Do you know what "elasticsearch" is, and are you certain you need it?

Configuration Files:
/etc/hosts - Count: 1

That may or may not be significant. Please read Fixing a hacked /etc/hosts file.

ah yeah I disabled them because the update agent once had high cpu usage.

yes I created the plist file, I regulary use it to develop (the same with postgresql), basically copies of the original homebrew files.

this is created by docker:

127.0.0.1 kubernetes.docker.internal

and sometimes I need that (docker is not autostarted tough)
