Pre-format the cell/column/row as text before entering anything. Everything you enter will be treated as text, including numbers, and it will not remove leading zeros. Same idea as using the leading apostrophe but more convenient if you are doing this in a column of cells or often changing the value in a single cell.
In addition to Barry’s suggestion, one can also Create [a] Custom Format, such as for all the Cells where you may have zip codes. Instead of using # symbols, you would use zeros (0s).
If you use a custom number format instead of text, one that allows both 5 and 9 digit zips might look like the one below. You do not type a dash when entering 9-digit zips, just the 9 digits. If there are any ZIPs that begin with four leading zeros (as in 00001-1234), this format won't work. Are there any?
