how to transfer iphone backup from icloud to mac

I have a "backup" on my icloud that was backed up from an old iphone when in the Apple store whilst purchasing a new device. It contains precious photos & videos that I would like to keep.

My question is, how can I access this data and back it up to my external hard drive?
