How to create a page break in Notes on the iPhone

That feature is not available in the Notes app. You would need to achieve that from the Pages app (or MS Word etc.).

No, that is not a native feature on Apple iOS Notes.

Perhaps, among your notes, you had a document copied & pasted from a different app, or a note that contained many "start a new line" inputs.
