I recently have bought ipad air 2019 (10.5) but later i came to know that it is not the latest one so can i replace it with the new ipad air 2020. And how?

You return the iPad for a refund.
Order what you want.
If you are outside of the 14 day return period, sell the iPad.
Use the money to buy what you want.
