Enable cookies in particular websites - Latest version of Safari 14.0.1

There are two financial websites where I cannot look at my accounts or information after I signed in. They ask me to allow cookies. I go to Safari Preferences and then Privacy. Please see screenshot below. How can I choose to allow cookie or not, if I don't have these choices? Can I just allow cookies on particular websites only, while I keep the rest of websites blocked?

Thanks for visiting the Apple Support Communities! It seems you're unable to access a couple websites fully, due to needing to enable cookies, and you're curious if it's possible to block all cookies apart from certain websites.

If you're still unable to view the website data after allowing cookies, then test after clearing Safari data, and check for updates to macOS which updates Safari:
