I have an excelent stereo system that I use as main output for the TV and Apple TV.
Would it be possible to use the HomePod as rear surround speakers, my current hifi system as front pair of speakers, and Apple TV 4K controling the rear output through the HomePods?

We see that you're looking to set up HomePods as a stereo system. While we can't speak to your other system, you can make use of HomePods for a home theater setup. See the following:
