If I go into settings-mail-accounts- the three mail accounts are gray instead of black and when touched there is no response so I can't make changes. I recently changed my email password for an email account and can't update my phone.
My question is : How did I lock myself out?

Is this happening when you're connected to Wi-Fi?
Try closing Settings and Mail, then restart your iPhone:

If you haven't tried already, try updating the accounts when not connected to Wi-Fi. If you're in range of your home Wi-Fi, try turning off Wi-Fi in Settings > Wi-Fi.
