One other thing you should know. When you do your OS downgrade, be sure to quit the Big Sur beta test program. If memory serves me, you go to About This Mac, open the window and click on Updates. That opens a window with an unsubscribe link on the lower left side. Otherwise, you will continue getting update messages.
