My Mac has dual boot but keeps booting up in Windows 10 and not Big Sur even if shut down from Big Sur. Is there a way to get dual boot to behave properly please without having to hold the option key on startup?

When in Mac OS find Startup Disk and select Mac OS the Boot Drive and should work fine. Also the same setting can be modified in Bootcamp Application on Windows 10. Right click on BootCamp icon in Task Bar and option select Start Up Disk and select Mac OS.
