Sidecar

My sidecar won't work with Big Sur and my iPad Pro. When I click sidecar it does not give me an option to connect to anything

Same here. M1 MacBook Air and 8th Gen iPad. All with most recent software. Control Center on Mac does not even show option in Display portion.
