IOS upgrade now a one-way trip?

IOS local backup file(s)? Since Finder (OS 10.15.7 & 11.0.1) took over the local backups for IOS, there is now only a single, current backup file available for recovery....not at all helpful considering the unresolved IOS battery drain problems. How does one now recover an iPhone to a functioning (earlier) IOS version?

Thank you. However, when backups were performed thru iTunes the local IOS backup filename included a date/time stamp, and for a Restore the user could select which IOS backup file to use. A single level backup seems seriously limited in functionality, and contrary to 'best practices'. Also, a Recovery from a local backup has always restored the 'original/backup' iPhone app, not the latest App Store version. So just thought IOS restore would function the same.

So then a full local IOS backup is really just my data and my apps.

Seems very restrictive.... if my iPhone IOS v12 is destroyed, and I restore from it's local backup onto a new/erased iPhone, then my Restore will be latest IOS version?

No, your "restore" will restore all your apps (will be downloaded again)

and all of your data at the time of the restore. Backup of any iDevice

is iOS agnostic and whatever iOS version you have in the new device

is what will remain on the device.
