Adding day/date to watch
Why can’t you add the day/date to Apple Watch faces anymore?
You need the Apple Calendar app. Reinstall it from the App Store.

I have the Apple Calendar app installed. It gives me the option on watch faces that have the day/date already installed.

For the date and time to be displayed on the watch you need to have the apple calendar on your phone.
If you have the stock apple calendar app on your phone and the date or time doesn't show on the watch then delete the calendar app from your phone and reinstall it from the phone app store.
