How do i deactivate one of my numbers? I don’t have my sim card anymore.

How do you want to deactivate it? If it’s for 2 factor authentication log in to https://appleid.apple.com and go to the Security section, where you can edit your trusted numbers.
If you mean for cellular service contact your carrier.
