I have iphone xmax and when restoring through connecting to iTunes, it keeps disconnecting although using original apple cable.

Try a different cable. You may also need to try a different USB port.
I already tried many cables, it usually starts restoring and after about 30 minutes it disconnected and show "connect to itunes) BUT keep loading on the PC screen. shall I leave it till finish? despite the "connect to itunes" message ?
If it is disconnecting and showing connect to iTunes, are you seeing this on the iPhone or the computer? A restore should not really take that long. Are you trying to restore from backup, or restore to factory?
The initial problem was that the phone got stuck due to too many wrong passwords, and when I plug it into iTunes it starts loading showing the itunes sign on the screen, and after 20 minutes the apple logo shows up on the iphone and it goes back to the stuck lock screen that says connect to iTunes, the desktop keeps loading though, even if I unplug the phone.

It sounds as if you are not getting it into Recovery Mode correctly. Are you using the instructions here, If you forgot the passcode on your iPhone, or your iPhone is disabled - Apple Support
