You mentioned the issue is intermittent, correct? Have you noticed any pattern, such as it happening within certain apps? If you have a screen protector or case o the iPad, have you tried removing it and testing the issue?
If those things don't help isolate the issue further, we'd recommend contacting Apple Support directly as they may have you back up and restore the iPad to further isolate the issue. You can reach out with the link below.

I have the same problem.
I have bought 2 iPad Air, one 2019 and one 2020, they both have the same problem.
Intermittently loses touch in different apps and funktions.
Both ar running the latest IOS 14.3, both are restarted, reintalled and fully charged, no battery issues.
Have tried without third party case, tried different cords and different adapters for headphones and more.
The problem is still there.
I have been in contact with Apple Support and there recomendation was to bring them in for service.
So thath is what I will do after Christmas, hopefully it will help.
