I am about to return to Australia from living/working in France. I am looking to buy an iPhone 12 from Apple store in France before leaving. Will this phone work in Australia with an Australian SIM and network plan? In addition, will the 12 month warrants still apply?

Yes, it will work in Australia if you buy an unlocked phone directly from Apple.
No, the warranty will only be honored in an EU country.
You would be better off buying it in Australia, as the cost of returning to an EU country for warranty service would not offset the possibly higher price in Australia (and it might not even be a higher price, considering the VAT in France).
