You can't do that unless the developer of the app you want to 'protect' has specifically coded that into their application.
Don't let your children play with your phone if you don't want them accessing things on it.

But I don't think iMessage is on the list of apps unfortunately
Face ID protects the entire device.
I understand that Face ID protects the whole phone, but I want certain apps like IMessenger and other social media apps locked so my children cannot access them. Do I need to download a specific app for that or does iPhones do it themselves? I checked Face ID in settings and put in my passcode and clicked on other apps and only two are listed... can I add more somehow?
You don't. There is no mechanism to password protect or Face ID protect the Messages App.
Unless you are sharing your phone with someone there's no need as you entire phone is already protected from any one else accessing it or your messages with Face ID.
Parental Controls is what you use.
