At one time I had messages being deleted from my phone after 1 year. I was however doing nightly backups to the cloud automatically. How can I retrieve the messages that got deleted from the device at the 1 year mark?

You don't. New backups overwrite old backups by default.
Unless you made a point of saving a backup that happens to contain the messages you're looking for, they're gone.

Deleted from phone...but where are they?
