It looks like when you use Messages and you type you're seeing a selection of emojis to replace what is being typed. We can see why you would reach out about your question for emojis doing this as you type. You've come to the right place for help.
With Predictive Text enabled and an emoji keyboard installed it will also look for a suggested emoji to replace the highlighted word. You can find more details at the link below.
