Where's the accent menu gone?

I'm a week into the acquaintance of a new MacBook Pro with Big Sur OS, and can't figure out what's happened to my accent menu. The old "Press and Hold" strategy doesn't evoke the menu, but rather a string of whatever letter I'm holding. I've found nowhere obvious in the Keyboard settings to toggle the accent menu back on -- in fact, searching for "accent menu" doesn't yield much of anything.

Anyone have any ideas for how to restore the accent menu? Thanks!

The usual fix for this is

open Terminal app and type

defaults write -g ApplePressAndHoldEnabled -bool true

and then restart.

If no luck, there are always the standard option key shortcuts
