With the document backed up, go to the page that you want to delete, select everything on that page, and press delete key. Would be neat if one could do this via thumbnail but not designed into the application.
Apple expects posts to be preceded by testing.
Had you followed your steps on a word processing document with actual content, it would have resulted in blank thumbnails for every page of the original document. Any images in the word processing document would have remained on the pages where they occurred, but all text would be gone. This advice could just plain ruin a person's day where they did not have a backup of their original document.
You are correct that in Layout mode, where one started in Layout Mode, that one can remove a thumbnail and its relevant page.
I just happened to have to do this very task today with 32 different files, and it worked absolutely perfectly for me.
The tone of your response is a bit condescending and wholly unnecessary.
I have tested this countless times across several Pages versions and again today using Pages v10.3.5 on Big Sur 11.0.1, with a copy of a multi-page document. I reported the results from that conversion to Layout mode, and the document resulted in blank pages save for one image.
I cannot agree with your post when I test and see the results firsthand. Nor is my experience unique, as others with prior versions of Pages received a surprise when they too converted word processing documents to layout mode, and ended up with blanks.
