Why does Apple think they have the right to force me to have a Health app? Do they think they are my doctor???

All the Health app does is serve as a repository for data collected by other apps and devices. As noted, you're not obligated to use it.

Go to Settings>Privacy>Health and disable everything. Go to Settings>Privacy>Motion & Fitness and disable everything. Health will collect pretty much nothing at that point. And then, just move it somewhere you don't see it and forget about it.
