when I record video in applications, the camera from the rear camera of the iPhone XS Max then there is no sound, or later the sound appears and disappears in the apple camera application only on the front works fine, stereo recording does not work at all in the camera application on iphone, YouTube sound video recording works ok ios14.2

Does this only happen in the Camera app?
Try testing Voice Memos, FaceTime and any other apps if possible:
If the microphones on your iPhone aren't working
If you're still having trouble with the microphones across many apps, contact Apple Support for help:
