So I believe I need ITunes to update my iPod and I don't believe it's on my Mac any longer. How do I get ITunes back?
You don't. Update it in the Finder.

Sorry Niel, but ITunes doesn't show up in Finder. I have Apple Music but no ITunes.
You're supposed to update the iPod in the Finder. See the article I linked to above.
