We ordered Epix while ATT U-Verse was our cable company. We’ve since moved and Xfinity provides our cable. How do we either cancel our current Epix subscription or convert it to Xfinity? We’re also not sure of where we ordered as it does not come up in our Apple subscriptions, but it is billed through Apple?

That is not possible. If your subscription is billed through Apple, then it must show up on your subscriptions overview for your Apple ID account. Do you perhaps have more than one Apple ID account to check for this subscription?
