I'm trying my first Fitness+ workout and "Looking for Apple Watch" message times out with "Apple watch unavailable". Watch is unlocked and bluetooth on watch is turned on. iPhone and watch are communicating because I can ping the Iphone from the watch. Any suggestions?
Apple support told me to try shutting down the iPhone and watch and leave them off for a minimum of 30 seconds before turning back on. That solved the problem.

uninstall Fitness+ On the iPad, Unpair your Apple Watch from your iPhone, sign out of iCloud on the iPad and... then set it back up.... that fixed it for me...
I’m getting the exact same issue, speaking to support at the minute but seems they don’t have a resolution. Works fine on my iPhone but not on iPad, not a good start for fitness+
iPhone is 6 plus. Watch is series 6. Both have updated software today.

That’s a lot of steps. Apple should fix this issue.
Same problem. Iphone Xs Max and 6series watch. All updated software. Restarts did not solve the problem.
Unpair your Apple Watch and try pairing it again, that worked for me
2nd time restarting both devices solved the issue!
