Shortcuts for specific Emojis and Symbols

I want to add a new shortcut to insert a specific symbol from Emojis and Symbols so that I don't have to open the Character Viewer every time. I am using it for transliteration in Word for Mac.

Missing checkbox for enabling emoji viewer in menu bar From what I gather, I should be able to enable the emoji viewer in the menu bar via System Preferences -> Keyboard -> Keyboard, where there should be a checkbox but that checkbox is not there. Any ideas where that checkbox went?
