How can one identify which app is ‘spying’ on you and how to prevent it from doing so?

You heard incorrectly. The orange and green indicators are simply that, nothing more. The orange dot indicates some app (usually for a phone call) is using the microphone. The green indicator shows your camera is being used by an app.
Sorry Peter, you misunderstand me. I have heard that whilst using the iPhone for maybe browsing the net or using social media apps the microphone (orange) or camera (green) light can appear as someone is eavesdropping on you. I understand that is merely a collecting activity for advertising but I think it’s abusing my privacy.
Which spying apps did you install?
Unless you gave your passcode and your appleID password to someone, nobody else can install such an app, even if one existed.
