I don’t have fitness+ on my fitness app. I see screenshots of how it’s supposed to look, with fitness+ between “summary” and “sharing” at the bottom, but mine doesn’t have it. I’m supposed to have fitness+ through my Apple One subscription. It’s telling me that my fitness app is up to date.

We recommend verifying that you meet the system requirements for Fitness+ by following these steps: Get Apple Fitness+ Specifically the section that says, "Here's what you need."
In addition, restarting your devices can help resolve unexpected behavior. Once you restart the iPhone, please check and see if the Fitness+ tab appears: Restart your iPhone
