Can my wife and I connect both of our watches to Apple TV/iPad/iPhone to use fitness plus together at the same time?

Apple Fitness + the devices used must be on the same Apple ID

So your watch, iPhone, iPad and or Apple TV must be on the same Apple ID

So not they can't be used at the same time at this point.
