Unpair and erase Apple Watch

I have just unpaired older Apple Watch, and paired my new Apple Watch. Old watch now says "Pair with an iPhone". Can I assume that the Watch is erased, or is it unpaired but contents still there?

On the old watch follow all these steps;

What to do before you sell, give away or trade in your Apple Watch, or buy one from someone else – Apple Support
