I have 10,000 photos between digital ones and analog scans, what is the best way to manage them in folders? When I pull up the chronological view, the analog scans all show up on the day I scanned them rather than when they were originally taken

In photos, select the images you want to change the date on, and in the image menu select "adjust time and date". If you have a set of photos you want to be all the same, then you can select them all and do them in one step.
One thing to be aware of - it adjusts the time for all photos by the same ammount, not to the same date. So if they already have different dates, and the first in the selection is adjusted by 5 years back, they will all be adjusted by 5 years from the date they already have.
EG Photo 1 - current date 1/1/2020
Photo 2 - current date 1/1/2015
Select them both, and change photo1 to 1/1/2018 (2 years back) then photo 2 will be set to 1/1/2013.
So probably best to use group change for images scanned at a similar time.

When I've scanned stuff I've tried to set the date manually as far as I can. Even if I only get the year right it helps.
How did you manually set the date (even if it is just a year which is fine) on the scanned photos?

There is no correct way and there is no best way, all you can do is decide what way you prefer.
You mention Folders - are these images in Photos app? Or in the Finder.
Photo apps get their metadata (like date and time) from the exif metadata recoded by the camera when the photo was taken. Scans do not have that data.
The images are all in the Photos app and I have manually put them into folders typically by year or place, the issue is when I look through the total photos chronologically it becomes really a mess due to the insertion of the large quantity of analog photos at recent dates
