Make sure the seller has done this:

What to do before you sell, give away, or trade in your Mac - Apple Support

If you are buying it out of the trunk of a car at midnight in a dark alley from a shady looking character it is likely stolen.

Call your local police department and check if the serial number is on a list of stolen computers.

If the deal is too good to be true it may be stolen.

I don't know of any other ways to check. Apple does not maintain a list of stolen computers.
