How can I disable screen touch when iPhone is at my ear?

It should do it automatically. If you have a case try without the case on it, if it works your case is blocking the proximity sensor. If that doesn't work, and you have a screen protector, it may be interfering with the sensor. If nothing works the sensor may be damaged, click on the Contact Support link at the top right of this page to start the service process.
