Everytime I listen to something on my iPhone, it mirrors to my Apple Watch (series 3). I want notifications and things to mirror there, but I don't want music and video and audio from websites viewed on iPhone to mirror there. How to configure?

Welcome to Apple Support Communities. We understand you'd like to avoid mirroring audio from an iPhone to an Apple Watch. We'll be happy to help.
You can toggle off, "Auto-launch Audio Apps" in the Watch app of your iPhone. To perform this step, you can open the Watch app on your iPhone and tap on the My Watch tab > General > Wake Screen > Auto-launch Audio Apps.
