How do I change my passcode back from letters to numbers and it doesn’t show passcode options.

Is this iPhone issued to you by an organization such as your employer? If YES then there the employer has installed a profile on it which is preventing you to change to a less secure passcode. You will have to contact your employer's IT administrator.
