All the local notes on my Macbook Pro disappeared after I upgraded to MacOS Big Sur, does anyone know how to recover them?

I decided to update my laptop today to MacOS Big Sur and foolishly did not think to back up my notes to Time Machine or iCloud. I had hundreds, if not thousands of notes that were "On My Mac" disappear and have been unable to find concrete solutions elsewhere how to recover them. I have been able to locate the text in a backup file called "NoteStore.sqlite-wal" by searching the coding, however I am wondering:

How do I transfer the text from this document so it is once again readable and in the Notes format?

Also if anyone knows of any other ways to recover local notes I would really appreciate it, they were very important to me and I'm panicking :(
