On your iPhone, if you tap on:

Watch > My Watch

and look under the "INSTALLED ON APPLE WATCVH" section, you can tap on an app an choose to hide it. But you can't actually delete it without also deleting it on yopu=r iPhone. AFAIK, the other builtin apps on the watch cannot be hidden or deleted.,
