I've got a new 27 inches iMac for my bday. how can i find out what iOS is installed? it was bought in November 2020. my wfh isn't compatible with the latest version as of now

First, Mac use Mac OS and not IOS. IOS only runs on iPads, iPhones etc... However to answer your question please click the  in the upper left of the display and the click About This Mac and it will tell you the version of Mac OS that is currently installed. It will look similar to the picture below:
