Remove Apple Watch from iPhone and add new apple watch
How do I unpair or remove my old completely shattered Apple Watch 3 from my IPhone so I can add my new one

Your iPhone can pair with more than one Apple Watch, just go ahead with the setup.
To delete the broken watch go to the Watch app on your iPhone. In My Watch tap All Watches then next to the watch to be removed tap the (i) icon.
