What I need to hook up to monitors to my Mac mini
What do I need to hook up my 2 monitors that have hdmi cables to my Mac mini that has 1 hdmi out

You will need to connect one directly to the HDMI port using an HDMI cable.
Then you will need to connect the second to a USB-C port using a USB-C to HDMI adapter.

You can also experiment with less expensive aftermarket USB-C to HDMI adapters and USB-C to HDMI cables.
