Having trouble connecting watch series 3 to iPhone 6 can I make it work?

Or to put it another way, the iPhone 6 will ONLY upgrade to iOS 12, but the Apple Watch needs iOS 14.

You need an iPhone 6s, iPhone SE (1 or 2), iPhone 7, or newer...

Iphone 6 will only pair to a watch with WatchOS5 or lower.

You cannot do what you want to do, because your iPhone is too old. Either return the Apple Watch for a refund, or get a newer iPhone. An iPhone 6s would be the minimum.
