Safe way to migrate photo and documents from iMac mid-2011 10.10.5 OSX to a new iMac? OR, how to back them up before taking old iMac to Apple store for onsite transfer? What kind of flash drive or external drive is necessary that will be compatible with old and new?

You should be able to use the Migration Assistant to transfer everything: Move your content to a new Mac - Apple Support
It is best to connect the two iMacs together by cable, preferably Ethernet, as it's much, much faster and more reliable than using WiFi as the document that 6x6 linked you to suggests using.
