Migration assistant always stuck
Tried 3x keeps saying moving files and it’s always 0 transferred

Depending on the type of connection you're using and the amount of data you're trying to transfer, it could take a while for your files to transfer. How long did you allow the migration to run prior to stopping it?
Please make sure you've followed the "Get ready" section of the referenced article before starting the migration:
Move your content to a new Mac
If possible, connect your Time Machine backup directly to the new Mac and transfer your data. This can provide you a faster and more stable transfer: Restore your Mac from a backup
