iMessage to text and vice versa

I sent a message to one contact with a text message instead of iMessage and now that contact is stuck on text message, even when the other contacts are fine with iMessage. Is there a way I can change it back to iMessage?

iPhone SE, iOS 14

When you send a message from and iPhone to non-iPhone users it will be sent as SMS/MMS

But when you send iMessage to iPhone users, the following conditions apply

If you do not have internet and have enabled Send as SMS it will be sent as SMS if you do not have internet. The next when you try it will again be attempted as iMessage.
If the recipient has not enabled iMessage, it will be again sent as SMS
