Having the same exact problem.

Restarted phone twice

Restarted itunes 5 times

unplugged and plugged back in both the usbc firewire cable and a normal usb firewire cable.

Reinstalled itunes.

Verified it worked fine with my iphone XS Max

Yet..... it still wont recognize this 1200 peace of hardware i just bought
