Contact Apple Privacy and request them to change the gender associated with your account. As far as I know there is absolutely no option to change it on your own.

First of all, gender is “derived” by name.

Not allowing users to change or set their gender appears to violate Apple’s discrimination policies.

Apple advertisers are required to set gender while targeting demographics for ads.
