iPhone 12 Pro Max says "Restore in Progress" for over 3 hours

I backed up my iPhone X to my hard drive on my Mac, so I could restore from backup on my new iPhone 12 Pro Max. I plug the 12 in, and it's shows in the finder and I'm able to select my backup. After about 30 minutes, the 12 doesn't show in the finder any longer, but the phone has said "Restore in Progress" for over 3 hours now. Is this normal? Shouldn't my iPhone still show in the finder while it's restoring from the backup saved on my hard drive?

I tried a hard reset and started the process over, and it's been 4+ hours (there's about 180gb of data).

NOTE: I tried to select iPhone 12 Pro Max from the dropdown, but it's not showing in the list.

I'm on Mac OS 10.15.7 and I had first updated the iPhone to iOS 14.2 before trying to restore.
